With over ten years of experience, he has established himself as a passionate advocate for authentic Japanese dining. In 2023, Ruben launched a new venture, Nineteen Hyaku, in collaboration with Carpenter Carpenter Hospitality. This project offers a distinctive fusion of contemporary sushi and robatayaki, earning acclaim for its exceptional Omakase experience.
In 2024, Chef Ruben deepened his knowledge of Japan’s rich culinary heritage by training under some of New York City’s top chefs. During this period, he pursued certification through the Japanese Cuisine & Dietary Culture Committee to further enhance his expertise.
Jimoto Omakase stands as one of San Antonio’s premier Omakase experiences and is uniquely certified by the Japanese Food & Ingredient Supporters program. Committed to honoring traditional Japanese culinary techniques, Jimoto SATX has embraced the role of a goodwill ambassador for Washoku, sharing the culture and craftsmanship of Japanese cuisine with the local community.
